It is not always possible to define a custom template.
So, where are the various default templates?
in every module options are available templates for the documents. You can chose there if there is more the one which to be active and default.
In different modules it is possible to define a folder where to insert ODT templates.
But as I wrote, this is not always possible and therefore I renew the request: where are the various default templates?

they are usually located in this folder:
/core/modules
in each module folder there is a doc folder example for invoices:
/core/modules/facture/doc
This is for pdf templates
