I would like to set up a stand-alone machine and an online service with Dolly bar both will be connected to each other mirroring the data back and forth.
if it is possible how to do that ? And what are the inconveniences ? thank you for your help

What will be the added value ? ( I cannot think of any)
Basically there is 2 part to syncro:
- Documents (dolibarr/doccuments)
- database
And with every sync mechanism come potential conflict (huge risk with db).
if you want security put documents and db files on a RAID drive (or on good cloud provider)
if you want back up, do dumps and store them on the cloud ( providers have special package for backup, very cheap per GB but there is small fee on data retrieval.)
