For the last couple of updates, when I add a tag to a banking transaction, the tag data doesn’t display when later retrieved. However, the data tag is being recorded because when searching for that specific tag, a list of those tagged entries is generated.
which dolibarr version @fcarll ? and can you show a picture of where you would like the tag to be shown?

When I add my tag - in this case “Frank” and update it, I get this.

I’m sorry for the confusion. I will try to explain what the issue is again.
When I pull up a banking record, the “Tag/Category” is blank. If I edit that record with a “Tag” and “Update” the record, the record reflect the “Tag” that I used.
However, if I retrieve that same record again at a later time, the “Tag” is not displayed making it seem like it had never been tagged before.
On the other hand, if I search for records with that “Tag” a full list of records with that “Tag” are displayed.
For whatever reason, when pulling a specific record, the system no longer pulls and displays the “Tag” field.

okay, it sounds like you should look for an issue at the dolibarr github page, and if none can be found, then make one
I confirm this issue starting update from 20.0.3 to 21.0.1 that display same tag label on all banking lines then, after update to 22.0.0 stop display all tags.
Is any one open an issue on github ?
