I have a question. If today I sell an item to my client and tomorrow he comes back asking for changing this product to another different or if he asks money back, how can I proceed ? I mean, how to proceed on processing it in stock / finance / etc ?

For the cases you have mentioned you issue a credit note from an invoice for money back then for products returned you do an stock adjustment.
