How to backup database without data but with all extrafields

Hello,
how would I be able to backup my dolibarr database including all extrafields I created without backing up data (i.e. customer orders, invoices, etc).

MySQL workbench can do what you want. Connect to your Dolibarr DB server, select the database, click “Server>Data export” and mark to dump data i.e. it will export only the tables structure.
