As categories, I imagine you want to know which tags/categories are used for customers or for products !!!
In fact every thirdparty or every product may be concerned by 0 to n tags/categories, and the results of such report may be very different …

in the screenshot, you are exporting the customer invoices. And indeed it’s not possible to select the categories as an additional field.
If you assigned categories to your customers and want to export them, too, you can create a second export. Select categroies for customers and suppliers and then the required fields. This second csv needs then finally to be merged with the first one with the help of Excel or whatever you are using.
