How exactly do you mean change/manipulate?
Change it globally to a certain date, for example instead of 10.03 to 30.02

it won’t be easy to set the 30th of Feb. in any way 
However, i know from Navision that you can use the current date or the work date, just to book documents with a different posting date.
I have searched for this workdate in Dolibarr myself, but were not successful. I guess you have to set the date of your pc to a different date, as Dolibarr just uses the systemdate.
