PDF invoices are actually stored locally on “download” directory.
How to change this directory?

This is a setting of your browser where to store downloaded files.
Documents are also created and stored in Dolibarr document management system (but updated when you geenrate a new one).
If you do not want to have them automaticaly saved when viewing you can try to set value “MAIN_DISABLE_FORCE_SAVEAS” to value 1 in Setup -> other setup
