Does any one know of a method to add a seal and signature image in the Proposal and Invoice at the “Written acceptance, company stamp, date and signature” when the proposal / invoice has been validated ?
You have a specific plugin to seal pdf, but also to have an eIDAS electronic signature

A simple way is in Modules/Application setup activate WYSIWYG editor. Then in proposal and invoice module setup there will be Free text WYSIWYG field where you can add a scanned image of your seal and signature.
