Looking at the documentation here, it’s badly outdated :
Can someone confirm which latest Ubuntu and Debian version are officially supported ?
Best to stick to Ubuntu LTS ?

This page states which PHP version in min and max.
Ubuntu 24.04 seems to come with PHP 8.3 so I believe it should work.
I would also consider looking at running Dolibarr as a container.
